As the weather continues to change and the temperatures drop, I keep thinking about healthy new foods to make for those extremely cold days where no one leaves their houses unless necessary. This granola is one recipe that is delicious and nutritious to eat, yet so very simple to put together. This is just one version of granola that I make. Please feel free to get creative with your mix in’s and have fun!
Autumn Harvest Peanut Butter Granola
Yield: approx. 7 cups

3 cups Organic Rolled Oats
½ cup raw Organic Almonds, each cut in half (I used Woodstock Foods)
½ cup raw Organic Pecans, each broken in half
½ cup dried Organic Cranberries
½ dried Organic Figs, quartered (I used Woodstock Foods)
¾ cup Organic peanut butter, you may also use almond or your favourite nut/seed butter
½ cup local honey
1 ½ teaspoon ground cinnamon
1/2 teaspoon black Hawaiian Sea Salt
1 teaspoon pure Vanilla extract
1 ounce shelled raw Organic Hemp seeds (I used Manitoba Hemps Foods)
3 tablespoons Organic Chia seeds
Preheat oven to 250 degrees Fahrenheit. Use coconut oil or your favourite oil to grease a baking sheet or alternatively you may use a Silpat instead.
In a small saucepan combine peanut butter, honey, cinnamon, sea salt, and vanilla. Warm just until melted, stirring frequently.
In a large bowl combine rolled oats, almonds, and pecans; toss together until evenly mixed. Pour melted peanut butter mixture over rolled oat mixture and mix until everything is evenly combined.
Pour this mixture onto your prepared baking sheet. Evenly spread out and bake for 30 minutes. Stir granola and bake for 15 minutes, then stir again. Bake for another 15 minutes and then stir in the dried cranberries and figs. Bake for 15 minutes; remove from oven, stir, and allow to cool. Once completely cooled, add Hemp and Chia seeds and toss evenly.
Serve with almond/coconut milk, vanilla Greek yogurt, over nice cream or gelato, straight up as a snack, or any other way you like to enjoy your granola. Bon appetit Starshines!
