Have you Starshines been basking in all of Luna’s glory the last few days? I surely hope so. If not I highly recommend checking her out tonight for the last night of this magnificent Super Moon in a string of super moons to occur over the last two years. The last time she was this close to the Earth was in January of 1948 and she won’t be this close again until November 2034. So please get yourselves out and under her magnificent radiant glow while you can.
And what better way to celebrate this absolutely GORGEOUS #supermoon then to dance my way around the kitchen listening to amazing music creating deliciousness!?!
My humble offering to our Super Luna is this special dark chocolate bark full of antioxidants and tons of good for you nutrition using Ghirardelli 60% dark chocolate and a trail mix consisting of: dried apples, cranberries, raisins, pumpkin sees, sunflower seeds, dark chocolate chips, and peanuts. This is such a wonderful combination of trail mix but you can use whatever tickles your fancy. Take your palette to soaring news heights like never before and allow your imagination to soar and explore. And don’t forget to share with your most beloved ones. Super Healthy Trail Mix Chocolate Bark

8 oz. (2 bars) of Ghirardelli dark chocolate
1 cup healthy trail mix of your choice (I purchased mine in the bulk section at my local grocery)
1 ½ teaspoon organic coconut oil
A sprinkle of Red Alaea Sea Salt (at the request of my cousin Peter)
Break chocolate up into small pieces and warm up over a double boiler just until melted. I broke up each of the bars before I opened them up.
Prepare a baking sheet with waxed paper. (I use an all-natural one made by Natural Value)
Stir in ¾ cup of trail mix with rubber spatula.
Pour onto your prepared pan and using a rubber spatula spread evenly. You don’t want it too thin.
Sprinkle evenly with the remaining trail mix and a lite sprinkle of sea salt.
Allow to cool and harden completely.
Break into medium sized pieces and store in an airtight container in a cool and dry place.
This chocolate bark is perfect to package and give away as gifts for any occasion! Or you may enjoy it all to yourself with coffee, tea, and any time you need a chocolate pick me up. Because let’s face it: who doesn’t like to have a nice fat squirrel stash of chocolate for the moments when you are most in need 😉
