This past week I have participated in a 7 Day Meditation challenge being hosted by the magificent Dr.’s Joy and Roy Martina (You can find more information here: http://christallin.com/en/ ). Each day we have a different mantra and as you move along with the mediations they build on each other. If you have been interested in meditation, but just haven’t jumped into it yet please check out these two wonderful souls as they are powerful and yet gentle about it all. They have helped myself and thousands of others become “The Greatest, Grandest Version” of ourselves. And I will be forever grateful!
As “Thanksgiving Day” continued to creep closer and closer throughout November, and as things really started to get heated up at Standing Rock in North Dakota, I kept finding myself not wanting to celebrate in the ‘traditional ways’. Not wanting to take part in a holiday that has been based upon lies passed down from generation to generation. As more and more knowledge is being released and learned by us all, I feel myself pausing DAILY IN MOMENTS OF GRATITUDE and being grateful for all, both the good and the not-so-good. So naturally as my understanding of Thanksgiving and what that has meant for so long is becoming more clear, so is my inner strength and love for all. Give gratitude for all as it has made you the bright and radiant being who is reading these words right now. Let us all take a few moments to send ourselves and everyone else around the planet more love!

These Pumpkin Monster Cookies have it all: sweetness, a dash of savoury, are super healthy, and sure to appease even the pickiest of little eaters. I whipped up a 6 dozen batch (double this recipe) to send to my family who gathered in southern Utah this year. ***Pssst… I’ll let you all in on a little secret: They are gluten free. Gluten Free Pumpkin Monster Cookies

Yield: approx. 3 dozen
1 1/2 cups Gluten free flour mix (I used Bob’s Red Mill)
½ cup coconut flour (I used Bob’s Red Mill)
1 teaspoon baking soda
2 teaspoons cinnamon
¾ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon grated nutmeg
½ teaspoon sea salt
1 cup (8 ounces) organic coconut oil, melted and cooled but still in liquid form
1 cup packed brown sugar
1 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup pumpkin puree
1 ½ cups old fashioned oats
1 cup dark chocolate chips
½ cup pepitas (pumpkin seeds)
½ cup sunflower seeds
½ cup raisins
½ cup dried cranberries
Preheat the oven to 350. Line your baking sheets with a silpat or parchment paper.
In a medium sized bowl, combine all the dry ingredients (except oats) and whisk together. In a large bowl stir together the coconut oil and sugars until well combined. Add the eggs one at a time, until well mixed. Add the vanilla and stir.
Mix the pumpkin in. Add the dry ingredients and oats; mix just until combined.
With a rubber spatula, fold in the dark chocolate chips, pepitas, sunflower seeds, raisins, and cranberries.
Using a portion/cookie scoop or spoons, drop dough by the scoopful onto your prepared baking sheets. Bake for 10-13 minutes, until done and lightly browned.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack for them to cool completely.
